La Buvette on Rue Saint-Maur is a masterclass in the Parisian cave à vin — tiny, with great by-the-glass pours. Camille Fourmont runs it, and its own site says natural.
Septime La Cave, near Charonne, is the wine bar from the Septime team. The list is short, rotating, and full of natural growers.
