The Truth About Sulfites in Wine
Sulfites get blamed for everything from headaches to hangovers. Here's what the science actually says.

Sulfites are the most misunderstood topic in wine. Let's clear it up.
Sulfur dioxide (SO2) is a preservative and antioxidant used in winemaking for centuries. It prevents spoilage and oxidation. Conventional wines can contain up to 350 mg/L. Natural wines typically use less than 30 mg/L, and many use zero.
The headache myth: sulfites don't cause wine headaches for most people. Dried apricots contain 5-10x more sulfites than wine. If you can eat dried fruit without a headache, sulfites aren't your problem. The more likely culprits are histamines, tannins, or simply dehydration.
That said, about 1% of people have genuine sulfite sensitivity (more common in asthmatics). For them, low-sulfite natural wines are genuinely better.
What sulfites DO affect is the wine itself. High sulfite levels can mute flavors, strip aromatics, and make wine taste flat and uniform. Low-sulfite wines tend to be more expressive, more alive, more... funky.
The natural wine argument isn't really about health — it's about taste. When you remove the safety net of sulfites, you get wine that's riskier but more rewarding. Some bottles are transcendent. Some are challenging. That's the deal.
